Why not start your day with a healthy breakfast! Avocado toast with a runny poached egg on top is not only delicious but very nutritious.
Avocados are a super food with many health benefits such as a cure for heartburn, helps with weight loss and will lower your cholesterol levels.
Rich in vitamins and minerals
They are also filled with vitamins and minerals such as vitamin K, vitamin C, folate, vitamin E, riboflavin, niacin and pantothenic.
Minerals include magnesium, potassium, copper, manganese and magnesium.
Top all that avocado goodness with a high protein poached egg for one healthy breakfast.
I use Dave’s whole grain bread as my toast. You want to use a natural fiber rich bread. I love all the sprouts and seeds that Dave’s bread has. Ezekiel bread is another healthy option.
1 Haas avocado
1/2 tsp salt
1/2 tsp onion powder
1/2 tsp cumin
1/2 tsp Pepper
1 tbs white vinegar
1 Dave’s bread slice
I tsp Everything but Bagel spice
Mash one Haas avocado in a bowl and add salt, onion powder, cumin and pepper. Set aside.
Fill small pot with water and your vinegar. When it comes to a simmer, swirl water and. crack your egg. For a runny egg I leave in the simmer for approximately 3-4 minutes.
While that is cooking, toast your Dave’s bread.
Then it’s as easy to assemble. Spread your toast with your mashed avocado, top with drained poached egg and sprinkle with Everything But The Bagel seasoning.
